Wholesome Orange Loaf Cake

Looking for more ways to include vitamin C into my family’s diet, I decided to make this simple whole orange cake.  The fiber stays in, it’s great for anytime of the day and packed with goodness.  As always, I use organic ingredients whenever possible to nourish our cells and keep all those harmful chemicals out of the diet.

Wholesome Orange Loaf Cake

This easy and nutrient dense cake is great snack any time of the day!

  • 2 cups whole wheat flour
  • 2 seedless whole oranges diced
  • 3 large eggs
  • 5 tbs olive oil
  • 1/2 cup brown sugar/honey/maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp banking soda
  • 2 tbs nuts/seeds of your choice
  • 1 tsp cinnamon (spices not included in picture)
  • 1/2 tsp ginger
  • 1/2 tsp cloves


  • In a large bowl, mix together the diced oranges, eggs, sugar, olive oil and vanilla essence.
  • In another bowl, mix the flour with the baking powder and soda.
  • Add the dry ingredients gradually to the wet one and whisk until the flour doesn't look dry. Do not over mix.
  • Line a greased loaf tin with baking paper and pour in the orange cake mix.
  • Drizzle the seeds over the batter and bake in a preheated oven for 40 minutes at 180°C or until the fork test is passed and cake is slightly browned.
  • Flip on to a flat plate after 5 minutes, remove the baking paper and then flip on a wire rack to cool.


After 5 minutes flip the cake on a plate, remove the baking paper and flip on a cooling wrack.  When completely cooled, slice and enjoy with a cup of tea or a beverage of your choice.
